Nanny's Sweet Potato Casserole

Ingredients

  • sweet potatoes (largest can available) or 2 or 3 regular cans
  • 2 eggs
  • vanilla extract (cap full)
  • sugar (to taste)
  • mini-marshmallows
  • butter - 3/4 stic

Directions

Cook your canned potatoes a bit til they are softened. Pour juice off after cooking (but save). Mash up with butter, add your eggs, vanilla, and sugar. Stir between adding each ingredient. Then spread in casserole dish (Pam) - sprinkle marshmallows all over top and put in a 350(F) oven until marshmallows are melted and browned.

*This recipe was the way my Nanny (Momma's Momma) made her sweet potato casserole. Now that she's gone, it's still good but never quite the same as her's was:) Like Momma's recipes, her's were never written down - only done by touch, sight and taste:)
